The Never Ending Roast

I made a pot roast on Monday (I will wait until the cheers of applause die down) and it was delicious! I bought a larger roast than normal so I could use the leftovers for a different meal. Very recessionista of me, right? Well, let me tell you ladies (and fella-hi Dad!) I have now made 3 meals out of it and I still have leftovers!! Matt is hopefully going to finish off the last of it tonight while I’m out with the girls.
I would like to say this officially vindicates me from the paste disaster of 2009. Amen!
