Pumpkin Butter

Matt sent me this recipe from one of his co-workers. It was really simple and delicious!! My only qualm-the butter takes 1.5 hours to set up! So, I stirred, and I stirred, and stirred and finally we had pumpkin butter. We had a test run of the little crescent roll bites that I’m bringing to my Mom’s for Thanksgiving. They were a hit! So now, the recipe….
1 15oz can pumpkin
1 cup applesauce
¾ cup apple juice
½ cup brown sugar, packed
1 teaspoon pumpkin pie spice
Mix together and bring to a boil over medium heat. Reduce heat and simmer for 1 ½ hours
Stir your little heart out!
The pumpkin crescent roll bites
Unroll the crescent rolls as normal
Add the pumpkin butter and roll them back up
Sprinkle with Cinnamon and Sugar
Bake as directed
***I added a powdered sugar glaze to mine-cause that’s just how I roll***
